For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, and oregano, then sear for 3-4 minutes per side until golden.
- Transfer chicken to a baking dish. In the same skillet, sauté mushrooms and garlic until softened, then add spinach and cook until wilted.
- Pour heavy cream over the vegetables, stir, then spoon mixture over the chicken. Top with mozzarella and Parmesan cheeses.
- Bake for 20-25 minutes until chicken is cooked through and cheese is bubbly and golden.
