For the Crust:
- 4 boneless, skinless chicken breasts
- 8 oz fresh mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large oven-safe skillet over medium-high heat and sear chicken until golden, about 3-4 minutes per side. Remove and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender and browned, about 5 minutes.
- Add spinach to the skillet and cook until wilted, about 2 minutes. Stir in heavy cream and Parmesan cheese, mixing until smooth.
- Return chicken to the skillet, nestling it into the spinach and mushroom mixture. Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.
