A hearty and healthy one-pan meal featuring tender chicken, earthy mushrooms, and fresh spinach, all baked together with a creamy, low-carb sauce.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and thyme. Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken until golden, about 3-4 minutes per side.
  3. Add mushrooms and garlic to the skillet, sauté until mushrooms are softened, about 5 minutes.
  4. Stir in spinach and cook until wilted. Pour in heavy cream and sprinkle with Parmesan cheese.
  5. Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through and sauce is bubbly.
