For the Crust:
- 4 boneless, skinless chicken breasts
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and thyme. Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken until golden, about 3-4 minutes per side.
- Add mushrooms and garlic to the skillet, sauté until mushrooms are softened, about 5 minutes.
- Stir in spinach and cook until wilted. Pour in heavy cream and sprinkle with Parmesan cheese.
- Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through and sauce is bubbly.
