A healthy and flavorful meal prep dish featuring tender chicken, crisp vegetables, and savory sauce served over rice with steamed greens.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breasts, sliced
  • 2 cups white rice, cooked
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 4 cups spinach or kale, steamed
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside.
  2. In a bowl, mix soy sauce, honey, and sesame oil to create the sauce.
  3. Heat vegetable oil in a large pan over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
  4. Add garlic, ginger, broccoli, bell pepper, and carrot to the pan. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
  5. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for 2-3 minutes until heated through.
  6. Steam spinach or kale until wilted, about 2-3 minutes.
  7. Divide rice, chicken stir-fry, and greens evenly into meal prep containers. Garnish with sesame seeds before serving.

Notes

You can customize the seasonings to taste.
