Description

A quick and healthy stir-fry featuring tender chicken, crisp broccoli, and savory mushrooms served over fluffy steamed rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms
  • 1 bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup jasmine rice, cooked as per package instructions
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook jasmine rice according to package instructions and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
  4. Add garlic, ginger, broccoli, bell pepper, and mushrooms to the skillet. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
  5. Pour in soy sauce and season with salt and pepper. Stir to combine and cook for another 2 minutes.
  6. Serve the stir-fry hot over steamed rice.

Notes

You can customize the seasonings to taste.
