For the Crust:
- 2 cups cooked chickpeas, drained and rinsed
- 2 medium beets, roasted and diced
- 4 oz feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp honey
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, honey, salt, and pepper to make the vinaigrette.
- Add chickpeas, diced beets, red onion, and parsley to the bowl. Toss gently to coat with the vinaigrette.
- Sprinkle crumbled feta over the salad just before serving and toss lightly to combine.
