For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 hard-boiled eggs, chopped
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine chickpeas, chopped eggs, red onion, and parsley.
- In a small bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the chickpea and egg mixture, and toss gently to coat.
