A refreshing and protein-packed salad featuring creamy avocado, tangy feta, and hearty chickpeas, perfect for a light lunch or side dish.

For the Crust:

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 large avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine chickpeas, diced avocado, feta cheese, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Serve immediately or chill for up to 1 hour before serving for best flavor.
