Description

Crispy potato skins filled with hearty chili and melted cheese, topped with classic garnishes for a crowd-pleasing appetizer or snack.


Ingredients

For the Crust:

  • 4 large russet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup prepared beef or vegetarian chili
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions
  • 2 tablespoons cooked and crumbled bacon (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce potatoes with a fork, bake directly on oven rack for 45-50 minutes until tender. Let cool slightly.
  2. Cut potatoes in half lengthwise. Scoop out most of the flesh, leaving about 1/4-inch shell. Brush skins inside and out with olive oil, season with salt and pepper.
  3. Place skins skin-side up on baking sheet, bake 10 minutes. Flip skin-side down, fill each with chili and cheese, bake 10-15 minutes until cheese is melted and bubbly.
  4. Top with sour cream, green onions, and bacon if using. Serve immediately.

Notes

You can customize the seasonings to taste.
