Description
Grilled halloumi cheese and fresh watermelon cubes are skewered and drizzled with spicy chili crisp for a perfect balance of hot and cold, salty and sweet.

For the Crust:
- 1 (8-ounce) block halloumi cheese, cut into 1-inch cubes
- 2 cups seedless watermelon, cut into 1-inch cubes
- 2 tablespoons chili crisp (such as Lao Gan Ma)
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh mint or cilantro
- 8 wooden or metal skewers (if wooden, soaked in water for 30 minutes)
Instructions
1. Prepare the Crust:
- Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread alternating cubes of halloumi and watermelon onto the skewers, leaving a little space between each piece.
- Brush the skewers lightly with olive oil. Grill for 2-3 minutes per side, until the halloumi is golden brown with grill marks and the watermelon is slightly charred.
- Transfer skewers to a serving plate. Drizzle with chili crisp and fresh lime juice, then sprinkle with chopped mint or cilantro.
- Serve immediately while the halloumi is warm and the watermelon is cool.
