Description

Grilled shrimp and pineapple skewers with a tangy chili-lime marinade make for a perfect summer dish.


Ingredients

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh pineapple chunks
  • 2 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine olive oil, lime zest and juice, chili powder, garlic powder, salt, and pepper to create the marinade.
  2. Add shrimp to the marinade and toss to coat. Marinate for 15 minutes.
  3. Thread shrimp and pineapple chunks onto skewers, alternating between shrimp and pineapple.
  4. Grill skewers over medium-high heat for 3-4 minutes on each side until shrimp are pink and cooked through.
  5. Serve immediately with extra lime wedges if desired.

You can customize the seasonings to taste.
