Grilled shrimp and pineapple skewers with a tangy chili-lime marinade make for a perfect summer dish.

For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh pineapple chunks
- 2 tablespoons olive oil
- Zest and juice of 2 limes
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine olive oil, lime zest and juice, chili powder, garlic powder, salt, and pepper to create the marinade.
- Add shrimp to the marinade and toss to coat. Marinate for 15 minutes.
- Thread shrimp and pineapple chunks onto skewers, alternating between shrimp and pineapple.
- Grill skewers over medium-high heat for 3-4 minutes on each side until shrimp are pink and cooked through.
- Serve immediately with extra lime wedges if desired.
