Description
A refreshing chilled tomato broth served with a melting basil oil cube for a burst of herbal flavor.

For the Crust:
- 4 cups ripe tomatoes, chopped
- 1 small shallot, minced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves
- 1/2 cup olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1 tsp sugar (optional)
Instructions
1. Prepare the Crust:
- Blend tomatoes, shallot, and garlic until smooth. Strain through a fine mesh sieve into a bowl.
- Season the tomato broth with salt, pepper, and sugar (if using). Chill in the refrigerator for at least 2 hours.
- Blend basil leaves with olive oil until smooth. Pour into an ice cube tray and freeze until solid (about 1 hour).
- To serve, pour chilled tomato broth into bowls and add a frozen basil oil cube to each. Let it melt slightly before enjoying.

You can customize the seasonings to taste.
