Description

Delicious mini cheesecakes with a chocolate pecan crust, perfect for dessert lovers.


Ingredients

For the Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup finely chopped pecans
  • 2 tablespoons cocoa powder
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, pecans, cocoa powder, and melted butter. Press the mixture into the bottom of each muffin cup.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add the egg and vanilla, beating until fully incorporated. Stir in the mini chocolate chips.
  4. Spoon the cream cheese mixture over the crust in each muffin cup. Bake for 18-20 minutes or until the edges are set.
  5. Cool completely in the pan on a wire rack. Chill in the refrigerator for at least 2 hours before serving.
