Description

A festive and creamy chia pudding made with ricotta cheese, holiday spices, and topped with seasonal fruits for a delightful Christmas breakfast or dessert.

For the Crust:

  • 1 cup ricotta cheese
  • 1/4 cup chia seeds
  • 1 cup milk (or almond milk)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 cup pomegranate seeds
  • 2 tablespoons chopped pistachios
  • Fresh mint for garnish

Instructions

1. Prepare the Crust:

  1. In a medium bowl, whisk together ricotta cheese, milk, maple syrup, vanilla extract, cinnamon, and nutmeg until smooth.
  2. Stir in chia seeds and mix well. Cover and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes.
  3. Before serving, divide the pudding into bowls and top with pomegranate seeds, chopped pistachios, and a sprig of fresh mint.
