For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 3 medium carrots, peeled and sliced
- 1 large red onion, cut into wedges
- 2 cups Brussels sprouts, halved
- 3 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tablespoons maple syrup
- 1 tablespoon fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss sweet potatoes, carrots, red onion, and Brussels sprouts with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
- While vegetables roast, combine feta cheese, walnuts, and maple syrup in a small bowl to make the crumble.
- Remove vegetables from oven and sprinkle the maple-feta crumble evenly over the top. Return to oven for 5 minutes to warm the crumble.
- Garnish with fresh parsley before serving warm.
