A festive and colorful medley of roasted winter vegetables topped with a sweet and savory maple-feta crumble, perfect for holiday gatherings.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 3 medium carrots, peeled and sliced
  • 1 large red onion, cut into wedges
  • 2 cups Brussels sprouts, halved
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss sweet potatoes, carrots, red onion, and Brussels sprouts with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
  4. While vegetables roast, combine feta cheese, walnuts, and maple syrup in a small bowl to make the crumble.
  5. Remove vegetables from oven and sprinkle the maple-feta crumble evenly over the top. Return to oven for 5 minutes to warm the crumble.
  6. Garnish with fresh parsley before serving warm.
