Description
Tender chicken braised in apple cider with sweet caramelized onions and aromatic herbs.

For the Crust:
- 4 bone-in, skin-on chicken thighs
- 2 large onions, thinly sliced
- 1 cup apple cider
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
- Salt and black pepper to taste
- 1/2 cup chicken broth
Instructions
1. Prepare the Crust:
- Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat and brown chicken on both sides, about 5 minutes per side. Remove and set aside.
- Add sliced onions to the skillet and cook, stirring occasionally, until caramelized and golden, about 10-12 minutes. Add garlic, thyme, and rosemary and cook for 1 minute until fragrant.
- Pour in apple cider and chicken broth, scraping up any browned bits from the bottom of the skillet. Return chicken to the skillet, bring to a simmer, then cover and cook for 20-25 minutes until chicken is cooked through and tender.
