For the Crust:
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 medium apple, peeled and diced
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a blender, combine cottage cheese, eggs, maple syrup, and vanilla. Blend until smooth.
- Add oats, baking powder, cinnamon, and salt to the blender. Blend until well combined.
- Stir in diced apple by hand.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
