Description

A moist and indulgent loaf cake soaked in a rich toffee sauce, perfect for dessert or a sweet treat.


Ingredients

For the Crust:

  • 200g pitted dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 85g unsalted butter, softened
  • 140g light brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp vanilla extract
  • For the toffee sauce: 100g unsalted butter, 100g light brown sugar, 100ml double cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 180°C (160°C fan). Grease and line a 2lb loaf tin.
  2. Place dates in a bowl, pour boiling water over, stir in baking soda, and let sit for 10 minutes.
  3. Cream butter and sugar until light. Beat in eggs one at a time, then fold in flour and vanilla.
  4. Stir in date mixture until combined. Pour into tin and bake for 40-45 minutes until a skewer comes out clean.
  5. For the sauce, melt butter and sugar in a pan, stir in cream, and simmer for 2-3 minutes until thickened.
  6. Poke holes in warm cake and pour half the sauce over. Serve slices with remaining sauce.

Notes

You can customize the seasonings to taste.
