For the Crust:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 cup cottage cheese
- 1 tbsp lemon juice
- 1 can chickpeas, drained and rinsed
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 tbsp honey
- 1/2 tsp chili flakes
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a bowl, mix flour, baking powder, and salt. Add Greek yogurt and olive oil, knead into a dough. Roll out into a thin round and bake for 12-15 minutes until puffed and golden.
- Toss chickpeas with smoked paprika, garlic powder, and a pinch of salt. Spread on a baking sheet and roast for 20 minutes until crispy.
- Blend cottage cheese and lemon juice until smooth and whipped. Spread over baked flatbread.
- Top flatbread with crispy chickpeas. Mix honey and chili flakes for hot honey, drizzle over everything. Garnish with parsley and serve warm.
