Description

A light and flavorful dish featuring tender cod fillets simmered in a zesty lemon butter tomato sauce.


Ingredients

For the Crust:

  • 4 cod fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup chicken or vegetable broth
  • 3 tbsp unsalted butter
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Pat cod fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in diced tomatoes, broth, oregano, and lemon juice. Bring to a simmer and cook for 5 minutes.
  4. Reduce heat to medium-low. Add butter and stir until melted. Gently place cod fillets into the sauce.
  5. Cover and simmer for 8-10 minutes, or until cod is opaque and flakes easily with a fork.
  6. Sprinkle with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
