A light and flavorful dish featuring tender cod fillets simmered in a zesty lemon butter tomato sauce.

For the Crust:
- 4 cod fillets (6 oz each)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup chicken or vegetable broth
- 3 tbsp unsalted butter
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Pat cod fillets dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes, broth, oregano, and lemon juice. Bring to a simmer and cook for 5 minutes.
- Reduce heat to medium-low. Add butter and stir until melted. Gently place cod fillets into the sauce.
- Cover and simmer for 8-10 minutes, or until cod is opaque and flakes easily with a fork.
- Sprinkle with fresh parsley before serving.
