For the Crust:
- 4 slices of rustic sourdough bread, toasted and cooled
- 1 cup whole milk ricotta cheese
- 1 large cucumber, peeled into ribbons with a vegetable peeler
- 2 passion fruits, halved and pulp scooped out
- 1 red chili, thinly sliced (seeds removed for less heat)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 lemon, zested and juiced
- Fresh mint leaves for garnish
- Sea salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Toast the sourdough bread until golden, then let it cool completely to room temperature.
- In a bowl, mix the ricotta with lemon zest, a squeeze of lemon juice, salt, and pepper until smooth.
- Spread a generous layer of the seasoned ricotta onto each cooled toast slice.
- Arrange cucumber ribbons over the ricotta, then spoon passion fruit pulp on top.
- Drizzle with olive oil and honey, then sprinkle with chili slices and fresh mint leaves.
- Season with an extra pinch of sea salt and black pepper before serving immediately.
