Description

A refreshing and vibrant toast featuring creamy ricotta, crisp cucumber ribbons, tangy passion fruit, and a hint of chili for a sweet-spicy kick.

For the Crust:

  • 4 slices of rustic sourdough bread, toasted and cooled
  • 1 cup whole milk ricotta cheese
  • 1 large cucumber, peeled into ribbons with a vegetable peeler
  • 2 passion fruits, halved and pulp scooped out
  • 1 red chili, thinly sliced (seeds removed for less heat)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 lemon, zested and juiced
  • Fresh mint leaves for garnish
  • Sea salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Toast the sourdough bread until golden, then let it cool completely to room temperature.
  2. In a bowl, mix the ricotta with lemon zest, a squeeze of lemon juice, salt, and pepper until smooth.
  3. Spread a generous layer of the seasoned ricotta onto each cooled toast slice.
  4. Arrange cucumber ribbons over the ricotta, then spoon passion fruit pulp on top.
  5. Drizzle with olive oil and honey, then sprinkle with chili slices and fresh mint leaves.
  6. Season with an extra pinch of sea salt and black pepper before serving immediately.
