For the Crust:

  • 1 large head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 yellow bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Arrange the romaine lettuce in a circular wreath shape on a large serving platter.
  2. Layer the cherry tomatoes, bell peppers, cucumber, red onion, and black olives over the lettuce in colorful sections.
  3. Sprinkle the crumbled feta cheese evenly over the top of the vegetables.
  4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  5. Drizzle the dressing over the wreath salad just before serving.
