For the Crust:
- 1 large head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 yellow bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Arrange the romaine lettuce in a circular wreath shape on a large serving platter.
- Layer the cherry tomatoes, bell peppers, cucumber, red onion, and black olives over the lettuce in colorful sections.
- Sprinkle the crumbled feta cheese evenly over the top of the vegetables.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
- Drizzle the dressing over the wreath salad just before serving.
