Soft, flourless cake bars packed with protein and bursting with blueberries.

For the Crust:
- 2 cups cottage cheese
- 3 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1 cup fresh or frozen blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a blender, combine cottage cheese, eggs, honey, and vanilla. Blend until smooth.
- Add rolled oats and baking powder to the blender and pulse until just combined.
- Gently fold in blueberries, then pour the batter into the prepared pan.
- Bake for 25-30 minutes, or until the top is golden and a toothpick inserted comes out clean.
- Let cool completely before slicing into bars.
