Description

Soft, flourless cake bars packed with protein and bursting with blueberries.


Ingredients

For the Crust:

  • 2 cups cottage cheese
  • 3 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 cup fresh or frozen blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a blender, combine cottage cheese, eggs, honey, and vanilla. Blend until smooth.
  3. Add rolled oats and baking powder to the blender and pulse until just combined.
  4. Gently fold in blueberries, then pour the batter into the prepared pan.
  5. Bake for 25-30 minutes, or until the top is golden and a toothpick inserted comes out clean.
  6. Let cool completely before slicing into bars.

Notes

You can customize the seasonings to taste.
