Description

Fluffy, protein-packed pancakes with a bright lemon flavor and a light, cloud-like texture, perfect for a wholesome breakfast.


Ingredients

For the Crust:

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

1. Prepare the Crust:

  1. In a blender, combine cottage cheese, eggs, flour, sugar, baking powder, lemon zest, lemon juice, vanilla extract, and salt. Blend until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  4. Flip and cook for another 1-2 minutes until golden brown and cooked through. Repeat with remaining batter.
  5. Serve warm with maple syrup, fresh berries, or a dusting of powdered sugar.
