For the Crust:
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil for cooking
Instructions
1. Prepare the Crust:
- In a blender, combine cottage cheese, eggs, flour, sugar, baking powder, lemon zest, lemon juice, vanilla extract, and salt. Blend until smooth.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown and cooked through. Repeat with remaining batter.
- Serve warm with maple syrup, fresh berries, or a dusting of powdered sugar.
