A light and fresh cheesecake made with cottage cheese and pineapple, offering a creamy texture with a tropical twist.

For the Crust:

  • 2 cups cottage cheese, blended smooth
  • 1 cup crushed pineapple, drained
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 pre-made graham cracker crust
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a blender, combine cottage cheese, sugar, vanilla, eggs, flour, and salt. Blend until smooth.
  3. Fold in crushed pineapple gently with a spatula.
  4. Pour mixture into graham cracker crust and smooth the top.
  5. Bake for 30 minutes or until set. Let cool completely before serving.
