For the Crust:
- 2 cups cottage cheese, blended smooth
- 1 cup crushed pineapple, drained
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 pre-made graham cracker crust
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- In a blender, combine cottage cheese, sugar, vanilla, eggs, flour, and salt. Blend until smooth.
- Fold in crushed pineapple gently with a spatula.
- Pour mixture into graham cracker crust and smooth the top.
- Bake for 30 minutes or until set. Let cool completely before serving.
