A light and healthy quiche without a crust, perfect for brunch or a simple dinner.

For the Crust:

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 5 eggs

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350°F (175°C) and lightly grease a quiche or pie pan.
  2. In a large bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the chopped spinach, season as desired, and pour the mixture into the prepared pan. Bake for 30 minutes or until set.
