For the Crust:
- 2 medium zucchinis, grated and excess moisture squeezed out
- 1 cup cottage cheese
- 4 large eggs
- 1 cup self-raising flour
- 1 cup grated cheddar cheese
- 1 small onion, finely chopped
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil for greasing
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (180°C). Grease a 9×9 inch baking dish with olive oil.
- In a large bowl, combine the grated zucchini, cottage cheese, eggs, self-raising flour, cheddar cheese, onion, parsley, salt, and pepper. Mix until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before slicing. Serve warm or refrigerate for a cold option.
