For the Crust:
- 1 sheet puff pastry, thawed
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1 egg, beaten (for egg wash)
- 2 tbsp powdered sugar (optional, for dusting)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until smooth.
- Roll out puff pastry and cut into triangles. Spoon a tablespoon of pumpkin mixture onto the wide end of each triangle, then roll toward the tip.
- Place croissants on the baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
- Let cool slightly, then dust with powdered sugar if desired. Serve warm.
