A sweet and tangy flatbread topped with creamy goat cheese, peppery arugula, and a balsamic drizzle, perfect for a light lunch or appetizer.

For the Crust:
- 1 pre-made flatbread or pizza crust
- 1/2 cup cranberry sauce (whole berry or jellied)
- 4 oz goat cheese, crumbled
- 1 cup fresh arugula
- 2 tbsp balsamic glaze
- 1 tbsp olive oil
- Salt and black pepper to taste
- Optional: 1/4 cup chopped walnuts for crunch
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place flatbread on a baking sheet and brush lightly with olive oil.
- Spread cranberry sauce evenly over the flatbread, leaving a small border around the edges.
- Sprinkle crumbled goat cheese on top of the cranberry sauce. Bake for 10-12 minutes, until cheese is slightly melted and edges are golden.
- Remove from oven and let cool for 2-3 minutes. Top with fresh arugula and optional walnuts.
- Drizzle with balsamic glaze, season with salt and pepper, slice, and serve immediately.
