Description

A sweet and tangy flatbread topped with creamy goat cheese, peppery arugula, and a balsamic drizzle, perfect for a light lunch or appetizer.


Ingredients

For the Crust:

  • 1 pre-made flatbread or pizza crust
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • 4 oz goat cheese, crumbled
  • 1 cup fresh arugula
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped walnuts for crunch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Place flatbread on a baking sheet and brush lightly with olive oil.
  2. Spread cranberry sauce evenly over the flatbread, leaving a small border around the edges.
  3. Sprinkle crumbled goat cheese on top of the cranberry sauce. Bake for 10-12 minutes, until cheese is slightly melted and edges are golden.
  4. Remove from oven and let cool for 2-3 minutes. Top with fresh arugula and optional walnuts.
  5. Drizzle with balsamic glaze, season with salt and pepper, slice, and serve immediately.

Notes

You can customize the seasonings to taste.
