For the Crust:
- 8 cups popped popcorn (plain, unsalted)
- 6 oz brie cheese, rind removed and cubed
- 1/2 cup dried cranberries, chopped
- 2 tbsp unsalted butter
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh thyme leaves (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Spread the popped popcorn evenly on the prepared baking sheet. Scatter the cubed brie and chopped cranberries over the popcorn.
- In a small saucepan, melt the butter over low heat. Drizzle the melted butter evenly over the popcorn mixture, then sprinkle with salt, pepper, and thyme if using.
- Bake for 8-10 minutes, until the brie is melted and bubbly. Remove from oven and let cool for 2-3 minutes.
- Gently toss the popcorn to coat with the melted brie and cranberries. Serve warm while the cheese is still gooey.
