A festive, savory-sweet snack featuring crispy popcorn coated in melted brie and dried cranberries, perfect for holiday gatherings or cozy nights in.

For the Crust:

  • 8 cups popped popcorn (plain, unsalted)
  • 6 oz brie cheese, rind removed and cubed
  • 1/2 cup dried cranberries, chopped
  • 2 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh thyme leaves (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Spread the popped popcorn evenly on the prepared baking sheet. Scatter the cubed brie and chopped cranberries over the popcorn.
  3. In a small saucepan, melt the butter over low heat. Drizzle the melted butter evenly over the popcorn mixture, then sprinkle with salt, pepper, and thyme if using.
  4. Bake for 8-10 minutes, until the brie is melted and bubbly. Remove from oven and let cool for 2-3 minutes.
  5. Gently toss the popcorn to coat with the melted brie and cranberries. Serve warm while the cheese is still gooey.
