For the Crust:

  • 8 oz brie cheese, cut into 1-inch cubes
  • 1 cup fresh cranberries
  • 1/4 cup honey
  • 2 sprigs fresh rosemary
  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • Wooden skewers (6-inch size)
  • Fresh rosemary sprigs for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thread brie cubes and cranberries alternately onto wooden skewers, placing 3-4 pieces of each per skewer.
  3. Arrange skewers on the baking sheet, drizzle with olive oil, and sprinkle with sea salt. Bake for 8-10 minutes until brie is soft and cranberries start to burst.
  4. While skewers bake, combine honey and rosemary sprigs in a small saucepan. Heat over low for 5 minutes, stirring occasionally, until fragrant. Remove rosemary sprigs.
  5. Drizzle the warm rosemary honey glaze over the baked skewers. Garnish with fresh rosemary sprigs and serve immediately.
