For the Crust:

  • 2 cups cooked chicken, shredded
  • 1/2 cup dried cranberries
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the shredded chicken, dried cranberries, celery, and red onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
