For the Crust:
- 1 cup orzo pasta
- 1/2 cup dried cranberries
- 4 oz goat cheese, crumbled
- 1/4 cup chopped walnuts
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook orzo according to package instructions until al dente, then drain and rinse under cold water.
- In a large bowl, combine cooled orzo, dried cranberries, crumbled goat cheese, chopped walnuts, and fresh parsley.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the orzo mixture and toss gently until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
