Description

A vibrant and tangy pasta salad with sweet dried cranberries, creamy goat cheese, and a zesty lemon vinaigrette, perfect for picnics or as a side dish.

For the Crust:

  • 1 cup orzo pasta
  • 1/2 cup dried cranberries
  • 4 oz goat cheese, crumbled
  • 1/4 cup chopped walnuts
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook orzo according to package instructions until al dente, then drain and rinse under cold water.
  2. In a large bowl, combine cooled orzo, dried cranberries, crumbled goat cheese, chopped walnuts, and fresh parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the orzo mixture and toss gently until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
