For the Crust:
- 1 (4-5 lb) boneless turkey breast
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 orange, zested and sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Pat the turkey breast dry and season with salt, pepper, and thyme.
- In a saucepan, combine cranberries, orange juice, honey, and orange zest. Simmer until cranberries burst and sauce thickens, about 10 minutes.
- Place turkey breast in a roasting pan, brush with olive oil, and roast for 20 minutes. Brush generously with the cranberry orange glaze and continue roasting until internal temperature reaches 165°F (74°C), about 40-50 more minutes, basting occasionally.
- Let turkey rest for 10 minutes before slicing. Serve with remaining glaze.
