For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup shelled pistachios, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy. Mix in vanilla extract.
  3. Gradually add flour and salt, mixing until just combined. Fold in cranberries and pistachios.
  4. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  5. Bake for 10-12 minutes, or until edges are lightly golden. Cool on baking sheet for 5 minutes before transferring to a wire rack.
