For the Crust:

  • 8 oz feta cheese, crumbled
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pomegranate seeds
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh mint, finely chopped
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Crackers or toasted baguette slices for serving

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine crumbled feta, dried cranberries, and pomegranate seeds.
  2. In a small bowl, whisk together olive oil, parsley, mint, lemon zest, minced garlic, salt, and pepper to create the herb oil.
  3. Pour the herb oil over the feta mixture and gently toss to coat evenly.
  4. Transfer the dip to a serving dish and let it sit for 10 minutes to allow flavors to meld.
  5. Serve with crackers or toasted baguette slices.
