For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1/2 cup dried cranberries
- 4 oz brie cheese, rind removed and cubed
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1/4 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Using a sharp knife, cut a horizontal pocket in each chicken breast, being careful not to cut all the way through.
- In a bowl, combine spinach, cranberries, brie, garlic, thyme, salt, and pepper. Stuff each chicken breast with the mixture and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
- Transfer skillet to the oven (or place chicken in the prepared baking dish) and pour chicken broth around the chicken. Bake for 20-25 minutes or until chicken is cooked through.
- Let rest for 5 minutes before serving. Remove toothpicks and enjoy.
