A festive and savory flatbread topped with creamy brie, sweet-tart cranberries, crunchy walnuts, and tender roasted squash.

For the Crust:
- 1 medium butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1 pre-made flatbread or pizza crust
- 4 oz brie cheese, sliced
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tbsp honey
- Fresh arugula for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cubed squash with olive oil, thyme, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.
- Place flatbread on a baking sheet. Arrange roasted squash, brie slices, cranberries, and walnuts evenly over the top.
- Bake for 8-10 minutes, until the crust is golden and the cheese is melted.
- Drizzle with honey and garnish with fresh arugula if desired. Slice and serve warm.
