For the Crust:
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts, toasted
- 4 oz brie cheese, rind removed and cubed
- 1/4 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and black pepper to taste
- 2 tbsp maple syrup (optional)
Instructions
1. Prepare the Crust:
- Place sweet potato cubes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes until fork-tender.
- Drain the sweet potatoes and return to the pot. Mash with a potato masher until smooth.
- Add heavy cream, butter, cinnamon, nutmeg, salt, and pepper. Stir until well combined and creamy.
- Gently fold in dried cranberries and toasted walnuts. If using, stir in maple syrup for extra sweetness.
- Transfer the mash to a baking dish. Press brie cubes into the top, spacing them evenly.
- Broil in the oven for 3-5 minutes until the brie is melted and bubbly. Serve warm.
