For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1 cup fresh or frozen cranberries
- 1/4 cup sugar
- 1/4 cup water
- 1/4 cup honey
- 1 tsp red pepper flakes
- 2 tbsp fresh thyme leaves
- Crackers or toasted bread for serving
Instructions
1. Prepare the Crust:
- In a food processor, combine feta, cream cheese, Greek yogurt, and lemon juice. Blend until smooth and creamy, about 2-3 minutes.
- In a small saucepan, combine cranberries, sugar, and water. Bring to a simmer over medium heat, stirring occasionally, until cranberries burst and sauce thickens, about 8-10 minutes. Let cool slightly.
- In another small saucepan, warm honey and red pepper flakes over low heat for 3-4 minutes, stirring occasionally. Remove from heat and let infuse.
- Spread the whipped feta mixture on a serving plate. Top with the cranberry sauce, then drizzle with the hot honey. Garnish with fresh thyme.
- Serve immediately with crackers or toasted bread.
