For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 1/4 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp honey
- 1 cup whole berry cranberry sauce
- 1/2 cup chopped pecans
- 1 tbsp brown sugar
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a food processor, combine feta, cream cheese, Greek yogurt, olive oil, and honey. Blend until smooth and creamy.
- Spread the whipped feta mixture evenly in a serving dish.
- In a small bowl, mix cranberry sauce with thyme leaves and spoon over the feta layer.
- Toast pecans in a dry skillet over medium heat until fragrant, then stir in brown sugar until melted and coating the nuts. Sprinkle over the cranberry layer.
- Chill for at least 30 minutes before serving. Serve with crackers, crostini, or vegetable sticks.
