A comforting and cheesy baked pasta dish featuring tender chicken, spaghetti, and a creamy sauce topped with melted cheddar, mozzarella, and flavorful roasted tomato chilies.

For the Crust:

  • 1 lb spaghetti, cooked al dente
  • 2 cups cooked chicken, shredded
  • 1 cup roasted tomato chilies, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in heavy cream, chicken broth, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes until slightly thickened.
  4. Combine cooked spaghetti, shredded chicken, roasted tomato chilies, and the creamy sauce in a large bowl. Mix well.
  5. Transfer the mixture to the prepared baking dish. Top evenly with cheddar, mozzarella, and Parmesan cheeses.
  6. Bake for 25-30 minutes, until the cheese is melted and bubbly and the edges are golden brown.
  7. Let cool for 5 minutes, garnish with fresh parsley, and serve warm.

Notes

You can customize the seasonings to taste.
