For the Crust:
- 1 lb spaghetti, cooked al dente
- 2 cups cooked chicken, shredded
- 1 cup roasted tomato chilies, chopped
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 2 cups heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in heavy cream, chicken broth, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes until slightly thickened.
- Combine cooked spaghetti, shredded chicken, roasted tomato chilies, and the creamy sauce in a large bowl. Mix well.
- Transfer the mixture to the prepared baking dish. Top evenly with cheddar, mozzarella, and Parmesan cheeses.
- Bake for 25-30 minutes, until the cheese is melted and bubbly and the edges are golden brown.
- Let cool for 5 minutes, garnish with fresh parsley, and serve warm.
