For the Crust:

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cauliflower florets, chopped
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add chicken, onion, and garlic, cooking until chicken is browned and onions are soft, about 8-10 minutes.
  3. Stir in heavy cream, thyme, paprika, salt, and pepper. Bring to a simmer, then remove from heat.
  4. Fold in cauliflower florets and half of the cheddar and Parmesan cheeses until well combined.
  5. Transfer the mixture to the prepared baking dish and top with the remaining cheeses.
  6. Bake for 25-30 minutes, or until bubbly and cheese is golden brown.
  7. Let cool for 5 minutes, garnish with fresh parsley, and serve warm.
