For the Crust:
- 12 oz linguine pasta
- 2 cups fresh basil leaves
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz burrata cheese
- 1/4 cup pine nuts, toasted
Instructions
1. Prepare the Crust:
- Cook the linguine according to package instructions until al dente, then drain and set aside.
- In a blender, combine basil, garlic, olive oil, salt, and pepper; blend until smooth to make a pesto.
- In a large skillet, heat the pesto over medium heat, then stir in heavy cream and Parmesan until the sauce thickens slightly.
- Add the cooked linguine to the skillet, tossing to coat evenly in the sauce.
- Serve the pasta in bowls, topping each with a piece of burrata and a sprinkle of toasted pine nuts.
