Description

A comforting, spicy pasta bake featuring tender chicken in a creamy Cajun sauce, roasted cherry tomatoes, and melted mozzarella cheese.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 8 oz penne pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with a pinch of salt and roast on a baking sheet for 15 minutes until softened.
  2. Cook penne pasta according to package directions until al dente, then drain and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and Cajun seasoning, cooking until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  4. In the same skillet, sauté onion and garlic until fragrant, about 3 minutes. Pour in chicken broth to deglaze, then stir in heavy cream. Simmer for 5 minutes until slightly thickened.
  5. Combine cooked pasta, chicken, roasted tomatoes, and cream sauce in a baking dish. Top evenly with mozzarella cheese.
  6. Bake for 15-20 minutes until cheese is bubbly and golden. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
