For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz penne pasta
- 2 cups cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with a pinch of salt and roast on a baking sheet for 15 minutes until softened.
- Cook penne pasta according to package directions until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and Cajun seasoning, cooking until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, sauté onion and garlic until fragrant, about 3 minutes. Pour in chicken broth to deglaze, then stir in heavy cream. Simmer for 5 minutes until slightly thickened.
- Combine cooked pasta, chicken, roasted tomatoes, and cream sauce in a baking dish. Top evenly with mozzarella cheese.
- Bake for 15-20 minutes until cheese is bubbly and golden. Garnish with fresh parsley before serving.
