A spicy and creamy pasta dish featuring tender grilled chicken strips tossed in a rich Cajun-seasoned sauce with bell peppers and onions.

For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into strips
- 2 tbsp Cajun seasoning, divided
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 8 oz fettuccine pasta, cooked al dente
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Season chicken strips with 1 tbsp Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add bell peppers and onion. Sauté until softened, about 5 minutes. Add garlic and remaining Cajun seasoning, cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens slightly, about 3-4 minutes.
- Return cooked chicken to the skillet. Add cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
