Description

A spicy and creamy pasta dish featuring tender grilled chicken strips tossed in a rich Cajun-seasoned sauce with bell peppers and onions.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 tbsp Cajun seasoning, divided
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta, cooked al dente
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken strips with 1 tbsp Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, add bell peppers and onion. Sauté until softened, about 5 minutes. Add garlic and remaining Cajun seasoning, cook for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth, bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens slightly, about 3-4 minutes.
  4. Return cooked chicken to the skillet. Add cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.

Notes

You can customize the seasonings to taste.
