For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 12 oz fettuccine pasta
- 2 cups broccoli florets
- 2 medium potatoes, peeled and diced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook fettuccine according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken, onion, and garlic, cooking until chicken is browned and cooked through, about 8-10 minutes.
- Add broccoli, potatoes, heavy cream, thyme, salt, and pepper to the skillet. Simmer for 5 minutes until slightly thickened.
- Combine the cooked fettuccine with the creamy chicken mixture in the baking dish. Top with cheddar and Parmesan cheeses.
- Bake uncovered for 20-25 minutes, until cheese is bubbly and golden. Let cool for 5 minutes before serving.
