For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add onions and mushrooms. Sauté until softened, about 5 minutes. Add garlic and cook for another minute.
- Stir in heavy cream, chicken broth, thyme, paprika, salt, and pepper. Bring to a simmer, then return chicken to the skillet. Cook for 2-3 minutes.
- Transfer the mixture to a baking dish. Top with mozzarella and Parmesan cheeses.
- Bake for 20-25 minutes, or until bubbly and golden brown. Garnish with fresh parsley before serving.
