For the Crust:

  • 4 boneless, skinless chicken breasts
  • 8 oz sliced cremini mushrooms
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt, pepper, and dried thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add onions and mushrooms. Cook until softened and mushrooms release their liquid, about 5-7 minutes.
  4. Add garlic and cook for 1 minute until fragrant. Sprinkle flour over the mixture and stir to coat.
  5. Gradually pour in chicken broth, stirring constantly to avoid lumps. Bring to a simmer until slightly thickened.
  6. Stir in heavy cream and return chicken to the skillet. Simmer for 5-7 minutes until chicken is cooked through and sauce is creamy.
  7. Garnish with fresh parsley before serving.
